Keep your peppercorns in a cool dry place away from sunlight or fluorescent light. Either use a mason jar with an air-tight seal or my preferred method of vacuum packing. Personally, I feel vacuum packaging provides a far superior result as you can separate it into many packs that can remain untouched until it’s time to open.
